🛒 Ingredients (1 serving):

  • 3.5 oz (100g of grilled chicken breast, cubed or sliced)
  • 1/2 cup cooked quinoa
  • 1/2 small avocado, diced
  • 1/2 cup shredded raw carrot
  • 1/2 cup sliced cucumber
  • 1/2 cup cherry tomatoes, halved
  • A handful of fresh greens (baby spinach, arugula, or lettuce)
  • 1 tablespoon extra virgin olive oil
  • Juice of 1/2 lemon
  • Sea salt and black pepper to taste

👩‍🍳 Instructions:

  1. Season and grill the chicken until golden brown. Set aside.
  2. In a bowl, start with a base of quinoa and fresh greens.
  3. Add the veggies, grilled chicken, and avocado on top.
